There are an unlimited number of ways that we can butcher your quarter beef, so we can’t list
them all here. We can deliver your quarter to you in one piece, cut into primals (short loin,
sirloin, etc.), or cut it into subprimals (the actual steaks and roasts). It is your choice and we
are happy to accommodate your requests.
